Cut up a pork shoulder into quarter inch slices, Marinate in some achiote paste, pineapple juice, white vinegar, and a few other spices. Stack them on a kabob with a slice of pineapple on the top and bottom and cook in the oven. After done cooking slice it up and put in a tortilla with diced pineapple and onion on top
