OK, here's how it works.

I'll go with a 20 oz Delmonico, blood rare. The undisputed 'King of Steaks'

I grew up on Porterhouse steaks as that's what Big John (my Dad) always ordered. It wasn't until my late twenties that I ever had a Delmonico or RibEye. I was always under the impression that a Rib Eye and a Delmonico were pretty much the same thing. So I've always referred to them as Rib Eyes so I wouldn't sound too uppity.wink.gif

They are not the same, the Delmonico is a thiner cut from the center of the loin. Being a thinner cut it's a better choice for rare to mid rare temperatures, it allows the fat pockets(aka eye) to cook and flavor the cut, without overcooking the flesh. A Delmonico is usually 1/2 - 3/4 inch thick, our 20 Oz cut is just over 3/4.

A true Rib-eye is usually going to be an end cut, unless your carving them yourself(standing rib roast) or you have a good hometown butcher. The Rib-eye will be smaller in diameter compared to a Delmonico, but is usually cut between 1 and 1 1/2 inches thick, our 18 oz cut is around 2 inches thick. This cut is perfect for Medium to Mid-Well temperatures, as it allows the larger fat pockets to cook and flavor the meat while you get a solid sear on the flesh.

Now you know and knowing is half the battle...Neg away.
