  8. Sounds like you need some comfort food this weekend, etifan! Let's make BRACIOLE together this weekend! It's like Italian Pot Roast. You get some chuck steaks and pound them thin. Season both sides (as if I had to tell YOU that!), then spread each steak with a helping of filling made from Fresh chopped garlic, shallot, parsley, basil, thyme, lemon zest, and browned Italian Sausage. Fold the ends in and roll the filled steaks up. Dust the outsides with seasoned flour and sear/sautee in a hot pan with a little coat of olive oil and butter. I eat a lot of lean proteins as well, because, as a chef, I eat pretty rich food on a consistent basis. So in order to stay in shape, when we eat at home, it's a lot of tofu and soy product, fantastic fishes, beef tenderloin (leaner than chicken breast!!). Reminds me of a dish I do for Sports themed parties: A duo of Cheesesteak sandwiches; the Chicken Cheesesteak has thick slices of juicy, smoky grilled chicken breast and a gooey bacon-beer-cheese sauce on a soft steamed Brat bun... German Potato Salad... A big stack of deep fried onion and pepper rings (or maybe some fried green tomatoes, my Southern friends...hmmmm... I think I need to go to the kitchen now...)

Meaning, all the cryers out there have gotten so used to watching us make decisions based on "feelings" and "loyalty" that they've forgotten that those decisions have usually turned out to be good for sentimentality but bad football decisions.
